KAISEKI-INSPIRED BIRD IN A CAGE

Before it's opening, Arumdalu Private Resort was searching for what can be the ultimate dining experience that can elevate the taste in Sahang Beachfront Resto. Something that can be so deep rooted in local culture and able to bring long lasting memory even on the first bite of the cuisine. In the search for perfection, final touch of inspiration comes through the philosophy of evoking the 5 senses on food by Heston Blumenthal and the beauty of Japanese Kaiseki. Completing all the map of ideas, the legendary menu BIRD IN A CAGE was created. Maybe this is the most complex dish both technically and philosophically that man have ever created. Well that’s what we think.

Let’s talk about the taste first. BIRD IN A CAGE is a representation of a true Indonesian locality as it uses 10 different spices to create the chicken/duck taste like no other. Let's call it the BIRD instead of saying chicken/duck (well those two options were given thoo, lol). So the bird it is infused with 10 different Indonesian spices, cooked in a way that it can be tender yet crispy in the same time.
It is paired with Urap, an Indonesian style of salad, which vegetables that are grown locally by local farmers, are tossed with slightly spicy coconut shredded, grown locally too. The rice under the Urapis created in oshibako style where it is squared with a special mold that is handcrafted with local wood. Moreover, the meal is completed with a set of pickles made from Belitung fruits and two kind of sambals that can represent two types of Indonesian sambal (spicy sauce) in general.

Talking only about taste is an understatement to BIRD IN A CAGE. The surprise came when it come to your table as it is served on top of a slab of local wood with Simpur leaf on top, and a Kaiseki-style cage that is covering the whole thing, with Pine leaves and cones on top of the cage, seemingly just dropped from the Pine tree on the beach. Why this design? The cage is made to represent how the bird is “alive” and full of flavor, which must be contained within the cage. As the last pinch of flavor to the cuisine, the pine leaves and cones on top of the cage is to represent the uniqueness of Belitung original beach where it has pine tree instead of coconut tree.

The unity of taste and visual impressions make BIRD IN A CAGE to be a new wave of Indonesian food culture scene. Indonesian food has always be envisioned to be totally traditional not inventive. However, Arumdalu Private Resorts try to bring Indonesian food into a new realm possibility. A combination of local wisdom, international understanding of food, and a dream of making a change in Indonesia food scene, BIRD IN A CAGE was born.

Mango Zori-Ebi, The Gems of Membalong

A deep philosophical meaning is put behind each cuisine in Arumdalu’s Sahang Beachfront Resto, one of the is Mango Zori-ebi. Mango Zori-Ebi is built upon the locality concept which we are expert in. We combine two local goodness, mango and Zori-ebi, into an exquisite dish that is served on top of a seemingly real mini seashore. We want to make our guests feel close with the nature surrounding us through this meal, evoking the five senses of gastronomical experience.

Zori-ebi, which is widely known as Slipper prawn, is in abundant in Membalong, South Belitung. Interestingly you could not find this outside Membalong, even at the city of Belitung. One reason might be because it must be cooked fresh in order to get the unique taste of Zori-ebi.
 
Besides the Zori-ebi, Seliu Mango is one of the specialty of Belitung island. We love so much the taste of the Mango from Seliu island, a small island 30 minutes away from our resort. We often called the island as ‘the mango island’ as it produces loads of mango during the season! The sandy soil and the hotness of Seliu island might be the reasons why the Mango has the right sourness for the Zori-ebi dish.

New Year indeed is such a festive moment that all of us have waiting for. However, have you plan your holiday for this end of 2015? If you haven’t, you should take a look for Arumdalu Private Resort.

NATURE AS THE SOUL OF INSPIRATIONS

Belitung is blessed with the natural gigantic granite stones and crystal clear waters like no other beaches in Indonesia. The unwavering beauty has stir a phenomenon for many tourists both Indonesian and foreign tourists. However, many does not realize that Belitung has many more hidden treasure to be discovered. One of the potential beside it’s beaches and stones is the unique plants growing there.
 The sandy and rich with mineral soils of Belitung make many exotic plants grows in Belitung island, which most of them bear petite fruits that are loved by birds and small animals. One of them is Keremunting fruit. Keremunting plants grows like a small dessert bushes and it’s fruit is crunchy, purple in colors, and tastes sweet with a hint of nutty taste. Keremunting has been used traditionally by the locals for snacks, and also for making jam and alcoholic fermented drink.​

We personally love the elegance of the flower of Keremunting plant. Sexy pinkish petals with pollen stamens dancing in golden colors during the hottest morning in dry seasons. The beauty of the flowers inspired us to appreciate Keremunting further by applying it into our artisanal personalize Arumdalu Batik.

1000 cranes of Hope

The story of origami cranes started from a Japanese girl named Sadako Sasaki. Sadako is remembered through the story of a thousand origami cranes before her death as the symbol of innocent victims of war. She was diagnosed with an acute leukemia, caused by the radiation exposure.

Being in the time of treatment, she was having plenty of time and her roommate that told her about the Japanese story of 1000 origami cranes, which promises that anyone who folds a thousand origami cranes will be granted a wish. However, she died when she had made only 644 before her death and all her friends completed the 1000 for her and buried all with her.

The 1000 origami cranes also represents the symbol of hope and good charm in the modern world and inspired by the story of 1000 origami cranes, we decorated our “origami cranes” in the luxury way as the symbol of hope and a wish for a good charm for this upcoming 2016.
